Mike Ebert is the founder of Firedancer Coffee Consultants, a firm dedicated to helping specialty coffee companies build successful, sustainable operations. With over 40 years of experience in the coffee processing, packaging, and distribution industry, Mike offers deep expertise across all facets of the specialty beverage supply chain.
As a Senior Consultant, Mike specializes in business process design, improvement, and implementation. He brings a systems-thinking approach to operations, combining industry insight with practical management solutions to support long-term business success. His work centers on aligning production systems with business strategy, employee and food safety, and quality management systems.
Mike’s coffee career began in 1985 as Director of Coffee and Plant Manager. Over the past eight years with Firedancer, he has focused on helping companies achieve operational excellence in the specialty beverage market. He is certified across multiple food safety certification schemes and has demonstrated expertise in:
• Program development and management
• Internal auditing and root cause analysis
• HACCP, GMPs, and food safety certification processes
Mike holds professional-level certifications in green coffee science, sensory analysis, roasting, and brewing. He is also an Authorized SCA Trainer (AST) for the Specialty Coffee Association (SCA) and teaches globally in green coffee, sensory skills, roasting, brewing, and coffee science. He currently serves on the Educational Council and Research & Education Centers of the SCA, where he helps shape the future of coffee education.
Through Firedancer, Mike primarily partners with roasters, producers, and retailers, supporting them in creating, refining, and growing specialty coffee programs with a strong foundation in quality, safety, and operational integrity.
