News of the Green


WHILE MOST ROASTERS have their favorite green beans—the ones they choose year after year for that perfect roast profile—there are always new and unusual green beans making their way into roasteries around the country. And while it would be nice to have time to sample every single one, that’s simply not a reality in the life of most roasters.


In an effort to make your sourcing easier, the Bean Scene highlights some of the exciting green beans that are available from around the world. Compiled in an easy-to-read format, and covering important features such as origin, flavor and availability, the Bean Scene makes it easier for you to find new and interesting beans to add to your flavor profile.

Drying Conditions Patio-dried
Processing Careful separation of primary and secondary de-pulped coffee with precise fermentation. Tertiary coffees sold into local market. Coffee is milled at Exportadora Toliman S. A., which is owned by relatives of the owner.


Flavor Unique and smooth. Acidity is a component of an amazingly smooth, well-structured and balanced cup. This coffee is influenced by the Pacific slope it grows on, and its smooth character is best at a light roast. Crystal-clean coffee due to careful picking of only ripe cherries. The 2003/2004 crop is reposo en pergamino (resting in parchment) to allow the structure to develop.


Notes This coffee is grown under a multi-species, multi-level canopy. Medicinal plants are grown as ground cover. Nurseries are built out of natural materials. Only 63 out of 170 hectares are in cultivation; the others are old growth biological reserve which is inhabited by the environmentally finicky Quetzal. The farm is owned and maintained by Federico Fahsen and his son, Federico Fahsen Jr.
